BBQ Pulled Pork Nachos

Description

Perfect for leftover pulled pork!


Ingredients

Scale
  • 1 1/2 cups cooked pulled pork tossed with ¼ cup BBQ sauce
  • 4 ounces pepper jack cheese, shredded
  • 2 ounces white American cheese
  • 1/3 cup heavy cream
  • 1 teaspoon white vinegar
  • 1 teaspoon kosher salt
  • Tortilla chips

Toppings:

  • Tamed jalapenos 
  • Sour cream
  • Black beans, drained
  • Green onion


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.  
  2. Make your cheese sauce: In a small saucepan over low to medium heat, warm 1/3 cup heavy cream until just heated through. Gradually stir in 4 oz shredded pepper jack and 2 oz American cheese, stirring frequently until smooth and fully melted. Keep the heat low to prevent curdling. Stir in 1 teaspoon white vinegar and 1 teaspoon kosher salt. Remove from the heat. 
  3. Warm through the pulled pork and toss with ¼ cup bbq sauce. 
  4. To your parchment lined baking sheet, add a layer of chips. Top with your melted cheese mixture, followed by the pulled pork and black beans. 
  5. Add to your preheated oven for 5 minutes. 
  6. Remove from the oven and top with your remaining toppings: tamed jalapenos, sour cream, and green onion. 
  7. Drizzle with extra bbq sauce if desired. Enjoy!
