- 1¾ cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- ½ cup ground walnuts
- 1 egg, yolk and whites separated
Cinnamon Sugar Mixture:
- ¼ cup white granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F. Grease a 9×13 cookie sheet with a lip.
- In a bowl, whisk together 1¾ cups all-purpose flour, 1 teaspoon ground cinnamon, and 1 teaspoon kosher salt and set aside.
- In a stand mixer fitted with a paddle attachment or using a hand mixer, beat 1 cup softened butter, 1 cup light brown sugar, 1 teaspoon vanilla extract, and 1 egg yolk until light and fluffy.
- Add the flour mixture and ½ cup ground walnuts to the bowl and mix until fully combined.
- Press the dough evenly into the greased pan.
- Beat the egg white until foamy, then brush it over the top of the dough.
- Bake for 25-30 minutes. While it bakes, stir together ¼ cup granulated sugar and 1 teaspoon ground cinnamon to make the cinnamon sugar coating.
- Remove from the oven and let the cookies rest for 15 minutes. Cut into squares, 1×1 inches works well.
- Once the cookies are cool enough to lift without breaking, roll all sides of each square in the cinnamon sugar. You may lose a few edge pieces in the process, but those are for testing!
