Cinnamon Sugar Cookie Squares

Ingredients

  • 1¾ cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • ½ cup ground walnuts
  • 1 egg, yolk and whites separated

Cinnamon Sugar Mixture:

  • ¼ cup white granulated sugar
  • 1 teaspoon ground cinnamon


Instructions

  1. Preheat the oven to 350°F. Grease a 9×13 cookie sheet with a lip.
  2. In a bowl, whisk together 1¾ cups all-purpose flour, 1 teaspoon ground cinnamon, and 1 teaspoon kosher salt and set aside.
  3. In a stand mixer fitted with a paddle attachment or using a hand mixer, beat 1 cup softened butter, 1 cup light brown sugar, 1 teaspoon vanilla extract, and 1 egg yolk until light and fluffy.
  4. Add the flour mixture and ½ cup ground walnuts to the bowl and mix until fully combined.
  5. Press the dough evenly into the greased pan.
  6. Beat the egg white until foamy, then brush it over the top of the dough.
  7. Bake for 25-30 minutes. While it bakes, stir together ¼ cup granulated sugar and 1 teaspoon ground cinnamon to make the cinnamon sugar coating.
  8. Remove from the oven and let the cookies rest for 15 minutes. Cut into squares, 1×1 inches works well.
  9. Once the cookies are cool enough to lift without breaking, roll all sides of each square in the cinnamon sugar. You may lose a few edge pieces in the process, but those are for testing!
