Holiday Dinner Veggie Crisis
Does anyone else struggle with holiday veggie side dishes? Thanksgiving every year seems so simple. For the most part the menu stays the same. Since we started hosting Thanksgiving 3 years ago, the only thing that continues to change year after year is what veggie we make.
We tried glazed carrots, traditional green bean casserole, and even skipped the veggie one year (oops). We loved the glazed carrots but now we do that for Easter.
But this year, we have a clear winner. I can’t wait to serve these Green Bean Bundles to my guests this Thanksgiving!
Ingredients
Very few, simple ingredients make this elevated side dish! I typically have most of these ingredients in the pantry. Even sometimes some bacon in the freezer. Just have to grab the green beans to whip these up!
Fresh Ingredients
- fresh green beans – cleaned and trimmed
- bacon – regular cut, thick cut won’t cook through fully!
- unsalted butter
- shallot
Pantry Ingredients
- pure maple syrup
- dijon mustard
- garlic powder
- black pepper

How to Make Bacon-Wrapped Maple-Dijon Green Bean Bundles
- Prep: Trim the green beans, then boil them in salted water for a few minutes until bright green. Transfer to an ice bath to stop the cooking, then pat dry.
- Make the Glaze: Whisk together melted butter, diced shallots, maple syrup, Dijon mustard, garlic powder, and black pepper. Set aside for later.
- Assemble the Bundles: Cut the bacon slices in half. Gather the green beans into small bundles (about 5 per bundle) and wrap each one tightly with a half slice of bacon. Place seam side down on the prepared baking sheet and secure with a toothpick if needed.
- Glaze and Bake: Spoon the glaze over each bundle, reserving a bit for later. Bake for 15 minutes, re-glaze, then bake another 10-15 minutes until the bacon is crispy and the green beans are tender.

As we previously touched on, these would be fantastic on Thanksgiving or on another holiday! They are truly an elevated side dish. Who doesn’t love bacon with their vegetables? You may find your pickier eaters might be more willing to give these a try.

Making Ahead of Time
If you want to get some prep done ahead of time, especially for an occasion like Thanksgiving, you absolutely can.
I’d recommend washing and trimming your green beans. Thoroughly pat them dry and throw them in a ziplock bag or container with a paper towel to absorb any moisture. Get your bacon cut in half and ready to go.
You can also make the glaze ahead of time and store it in the fridge, but since it contains butter, you will have to heat it back up in a small saucepan or in a dish in the microwave in multiple intervals until warmed through. Ensure it gets back to your glaze consistency.

Maple-Dijon Green Bean Bundles

An easy, elevated side dish!
Ingredients
- 12 ounces fresh green beans, ends trimmed
- 4–6 slices regular cut bacon, cut in half
- ¼ cup pure maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons unsalted butter, melted
- 2 heaping tablespoons finely diced shallot, about 1 shallot
- 1 teaspoon garlic powder
- Black pepper, to taste
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Wash and trim 12 ounces of green beans.
- Bring a pot of water to a boil and heavily salt it.
- Add the trimmed green beans and cook for 4-5 minutes, until bright green and slightly tender.
- Drain the green beans and immediately transfer to a bowl of ice water to stop the cooking. Once cool, pat dry thoroughly.
- In a small measuring cup or mixing bowl, whisk together 2 tablespoons melted, unsalted butter, finely diced shallots, ¼ cup pure maple syrup, 2 tablespoons Dijon mustard, 1 teaspoon garlic powder, and fresh ground black pepper to taste. Set aside.
- Slice the strips of bacon in half.
- Group the green beans into bundles, about 5 green beans per bundle.
- Wrap each bundle tightly with a half slice of bacon.
- Lay seam side down on the parchment lined baking sheet. They typically hold pretty well, but you can secure them with a toothpick if needed.
- Spoon the glaze generously over each bundle, reserving about ¼ of the mixture to glaze again halfway through baking.
- Bake for 15 minutes, remove the pan from the oven and spoon the remaining glaze over the bundles.
- Bake for an additional 10-15 minutes until the bacon is fully cooked and the green beans are tender. Broil for 1-2 minutes watching closely for desired color.

Frequently Asked Questions
Why do you have to use regular-cut bacon?
You want to use bacon on the thinner side to ensure it cooks through but also gets a good crisp. If you use thick-cut bacon, by the time the bacon is done, your green beans will be overcooked.
Why do you have to boil the green beans?
We blanch the green beans to give them a head start on cooking. It gives us a more tender end result.
