Maple-Dijon Green Bean Bundles

Description

An easy, elevated side dish!


Ingredients

  • 12 ounces fresh green beans, ends trimmed
  • 4-6 slices regular cut bacon, cut in half
  • ¼ cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons unsalted butter, melted
  • 2 heaping tablespoons finely diced shallot, about 1 shallot
  • 1 teaspoon garlic powder
  • Black pepper, to taste


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Wash and trim 12 ounces of green beans.
  3. Bring a pot of water to a boil and heavily salt it. 
  4. Add the trimmed green beans and cook for 4-5 minutes, until bright green and slightly tender.
  5. Drain the green beans and immediately transfer to a bowl of ice water to stop the cooking. Once cool, pat dry thoroughly.
  6. In a small measuring cup or mixing bowl, whisk together 2 tablespoons melted, unsalted butter, finely diced shallots, ¼ cup pure maple syrup, 2 tablespoons Dijon mustard, 1 teaspoon garlic powder, and fresh ground black pepper to taste. Set aside.
  7. Slice the strips of bacon in half. 
  8. Group the green beans into bundles, about 5 green beans per bundle. 
  9. Wrap each bundle tightly with a half slice of bacon.
  10. Lay seam side down on the parchment lined baking sheet. They typically hold pretty well, but you can secure them with a toothpick if needed.
  11. Spoon the glaze generously over each bundle, reserving about ¼ of the mixture to glaze again halfway through baking.
  12. Bake for 15 minutes, remove the pan from the oven and spoon the remaining glaze over the bundles. 
  13. Bake for an additional 10-15 minutes until the bacon is fully cooked and the green beans are tender. Broil for 1-2 minutes watching closely for desired color.
