Have you ever bought the industrial size box of Rice Krispie treats from a bulk store? I love them, but have to say the ones with the chocolate chip drizzle or mini m&ms always get eaten first. Then we’re left with the plain ones….
If you’re not thinking it already, you know exactly why I make these. We need a Christmas version of the nostalgic lunch box snack, right? A little extra flavor, a little pizazz. These are deliciously chewy and filled with just the right ratio of chocolate and candy cane. You can meal prep them on the weekend and stick them in lunchboxes!

Peppermint White Chocolate Rice Krispie Treats Ingredients
- unsalted butter
- mini marshmallows – melts quicker than the large ones
- vanilla extract
- Rice Krispies cereal – a classic!
- white chocolate chips – add the perfect additional sweetness
- crushed candy canes – I buy either the small or large candy canes and crush them in a ziplock bag

How to Make Peppermint White Chocolate Rice Krispie Treats
- Prepare the Pan: Line a baking pan with parchment paper, leaving some overhang for easy removal.
- Mix the Dry Ingredients: In a large bowl, combine the Rice Krispies cereal, white chocolate chips, and crushed candy canes. Set aside.
- Make the Marshmallow Mixture: In a large pot over low heat, melt the butter. Add the marshmallows and vanilla, stirring until completely smooth.
- Combine: Remove from the heat and stir in the cereal mixture until everything is evenly coated.
- Press and Slice: Transfer the mixture to the pan and gently press into an even layer. Sprinkle crushed candy cane over the top while still warm. Let them set at room temperature before slicing and serving.

Ingredients
- 4 tablespoons unsalted butter
- 1 10oz bag mini marshmallows
- 1 teaspoon vanilla extract
- 6 cups Rice Krispies cereal
- ¾ cup white chocolate chips
- ¼ cup finely crushed candy canes, plus an extra 2 tablespoons for topping
Instructions
- Line a 9×13 baking pan with parchment paper, leaving an overhang for removing later.
- In a large mixing bowl, combine 6 cups Rice Krispies cereal, ¾ cup white chocolate chips, and ¼ cup crushed candy canes. Set aside.
- In a large pot over low heat, melt 4 tablespoons unsalted butter. Add 10 oz mini marshmallows and 1 teaspoon vanilla extract, stirring constantly until completely melted and smooth.
- Remove the pot from the heat and immediately stir in the Rice Krispies mixture until evenly coated.
- Transfer the mixture to your pan and gently press it into an even layer.
- While still warm, sprinkle 2 tablespoons crushed candy cane evenly over the top.
- Let set at room temperature for 30 minutes before slicing into bars.
Notes
Ensure you crush the candy canes pretty fine, too large of pieces will make it hard to chew.
