Ingredients

  • 4 sweet or hot italian sausage links
  • 16 oz mini sweet peppers, sliced
  • 1 large white onion, sliced
  • 4 cloves of garlic, finely chopped
  • ¼ cup white wine
  • 2 tablespoons tomato paste
  • 1/3 cup plus 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • Black pepper to taste


Instructions

  1. Preheat your oven to 400°F.
  2. Wash and slice the peppers into strips. Peel and slice the onion into strips and finely chop 4 cloves of garlic.
  3. In a baking dish, add the whole Italian sausage links. Drizzle with 2 tablespoons olive oil and season with ½ teaspoon kosher salt, ½ teaspoon onion powder, ½ teaspoon garlic powder, and black pepper to taste. Toss to coat.
  4. In a separate baking dish, combine the sliced peppers, onions, and chopped garlic. Drizzle with 1/3 cup olive oil and season with 1 teaspoon kosher salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, and black pepper to taste. Toss to combine.
  5. Place both baking dishes in the oven and bake for 30 minutes.
  6. Remove both dishes from the oven. Slice the sausages into bite-sized pieces, slicing diagonally instead of straight across.
  7. Add the sliced sausage to the peppers and onions. Stir in ¼ cup white wine and 2 tablespoons tomato paste and mix until everything is evenly coated.
  8. Return the dish to the oven and bake for 1 hour, stirring every 15 minutes to ensure even cooking.
  9. Remove from the oven and give everything a final stir.
  10. Serve on rolls, over pasta, or with crusty bread!
