Homemade Hamburger Helper – a nostalgic weeknight dinner!

- 12 oz ground sirloin or ground beef
- 3 cups chicken broth
- ¼ cup heavy cream, room temperature
- 8 oz elbow pasta
- 6 oz extra sharp cheddar cheese, about 2 cups
- 1 tablespoon olive oil
- 1 small shallot, finely diced
- 1 ½ tablespoons tomato paste
- 1 tablespoon tomato bouillon
- ¼ teaspoon paprika
- ¼ teaspoon ground mustard
- ¼ teaspoon chili powder
- ½ teaspoon onion powder
- Dash of cayenne pepper
Instructions
- Heat 1 tablespoon of olive oil in a large skillet or dutch oven over medium heat.
- Add the diced shallot and cook until translucent.
- Add the ground sirloin, breaking it up into small pieces. Cook until fully browned and no pink remains.
- Add ½ teaspoon onion powder, ¼ teaspoon chili powder, ¼ teaspoon ground mustard, ¼ teaspoon paprika, a dash of cayenne pepper, 1 tablespoon tomato bouillon, and 1½ tablespoons tomato paste. Stir until everything is well combined.
- Pour in 3 cups of chicken broth and bring to a boil. Stir in the elbow pasta, then reduce the heat to a simmer.
- Simmer uncovered for 8-10 minutes, stirring often, until your pasta is al dente.
- Lower the heat. Stir in ¼ cup heavy cream and 6 oz extra sharp cheddar cheese until fully melted and combined.
- Remove the pot from the hot burner. Let sit for 5-10 minutes to thicken before serving!
