Description

Homemade Hamburger Helper – a nostalgic weeknight dinner!


Ingredients

Scale
  • 12 oz ground sirloin or ground beef
  • 3 cups chicken broth
  • ¼ cup heavy cream, room temperature
  • 8 oz elbow pasta
  • 6 oz extra sharp cheddar cheese, about 2 cups
  • 1 tablespoon olive oil
  • 1 small shallot, finely diced
  • 1 ½ tablespoons tomato paste
  • 1 tablespoon tomato bouillon 
  • ¼ teaspoon paprika
  • ¼ teaspoon ground mustard
  • ¼ teaspoon chili powder
  • ½ teaspoon onion powder
  • Dash of cayenne pepper


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet or dutch oven over medium heat.
  2. Add the diced shallot and cook until translucent.
  3. Add the ground sirloin, breaking it up into small pieces. Cook until fully browned and no pink remains.
  4. Add ½ teaspoon onion powder, ¼ teaspoon chili powder, ¼ teaspoon ground mustard, ¼ teaspoon paprika, a dash of cayenne pepper, 1 tablespoon tomato bouillon, and 1½ tablespoons tomato paste. Stir until everything is well combined.
  5. Pour in 3 cups of chicken broth and bring to a boil. Stir in the elbow pasta, then reduce the heat to a simmer.
  6. Simmer uncovered for 8-10 minutes, stirring often, until your pasta is al dente. 
  7. Lower the heat. Stir in ¼ cup heavy cream and 6 oz extra sharp cheddar cheese until fully melted and combined.
  8. Remove the pot from the hot burner. Let sit for 5-10 minutes to thicken before serving!
