Valentine’s Double Chocolate Chip Cookies

Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup light brown sugar
  • ¼ cup granulated white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1½ cups all purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup white chocolate chips
  • ½ cup semi-sweet chocolate chips
  • ½ cup Valentine’s sprinkle mix (red, pink, white)


Instructions

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper. 
  2. In a large mixing bowl or stand mixer with the paddle attachment, cream together ½ cup softened unsalted butter, ¾ cup light brown sugar, and ¼ cup granulated sugar until smooth.
  3. Beat in 1 egg and 1 teaspoon vanilla extract until fully incorporated.
  4. In a separate bowl, combine 1½ cups all purpose flour, ¾ teaspoon baking soda, and ½ teaspoon kosher salt. Slowly add to the wet ingredients and mix until the dough comes together.
  5. Fold in by hand ½ cup white chocolate chips, ½ cup semi-sweet chocolate chips, and ½ cup Valentine’s sprinkles until evenly distributed.
  6. Scoop 1½ tablespoons of dough and place 2 inches apart on the parchment lined baking sheet. 
  7. Bake for 8-10 minutes or just until edges are set and lightly golden.
  8. Let cookies cool on the pan for 5 minutes, then transfer to a wire rack.
