Banana Cake with Vanilla Bean Glaze

For the Cake

  • 1½ cups cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup light brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla bean paste
  • 1 cup mashed very ripe bananas, about 2 medium bananas
  • ½ cup buttermilk, room temperature
  • 1 tablespoon avocado oil

For the Vanilla Bean Glaze

  • 1½ cups powdered sugar
  • 2 tablespoons unsalted butter, melted
  • 3 tablespoons whole milk
  • 1 teaspoon vanilla bean paste
  • ¼ teaspoon kosher salt


Instructions

  1. Preheat your oven to 350°F. Line an 8×8 baking dish with parchment paper, leaving overhang on two sides for easy removal.
  2. In a bowl, whisk together 1½ cups cake flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon kosher salt. Set aside.
  3. In a large mixing bowl or stand mixer fitted with the paddle attachment, cream together ½ cup softened butter, ½ cup granulated sugar, and ¼ cup light brown sugar for 3-4 minutes, until light and fluffy.
  4. Beat in 2 eggs, one at a time, followed by 2 teaspoons of vanilla bean paste. Mix until smooth.
  5. Add 1 cup mashed ripe bananas and 1 tablespoon avocado oil. Mix just until combined.
  6. Add half of the dry ingredients and mix just until combined. Mix in ½ cup of buttermilk, then add the remaining dry ingredients and mix until no dry streaks remain.
  7. Spread the batter evenly into the prepared baking dish.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for about 15 minutes before lifting it onto a wire rack to cool completely.
  10. To make the glaze, whisk together 1½ cups powdered sugar, 2 tablespoons melted butter, 2 tablespoons milk, 1 teaspoon vanilla bean paste, and a ¼ teaspoon kosher salt. Add the remaining tablespoon of milk as needed.
  11. Pour the glaze over the completely cooled cake and gently spread it to the edges, allowing some to drip naturally down the sides. Let the glaze set for 20-30 minutes before slicing.
