For the Sweet Potatoes

  • 2½ lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the Maple Dijon Glaze

  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • ½ teaspoon apple cider vinegar
  • ¼ teaspoon kosher salt

For Serving

  • Flaky sea salt

Instructions

  1. Preheat the oven to 425°F. Line a large baking sheet with parchment paper for easy cleanup.
  2. Add 2½ lbs cubed sweet potatoes, 2 tablespoons olive oil, 1 teaspoon kosher salt, and ½ teaspoon black pepper to the prepared baking sheet. Toss until evenly coated, then spread into a single layer, making sure the potatoes aren’t overcrowded.
  3. Roast for 30-35 minutes, flipping halfway through, until the sweet potatoes are tender and caramelized around the edges.
  4. While the sweet potatoes roast, whisk together 2 tablespoons melted unsalted butter, 2 tablespoons pure maple syrup, 1 tablespoon Dijon mustard, ½ teaspoon apple cider vinegar, and ¼ teaspoon kosher salt in a small bowl until smooth.
  5. Remove the baking sheet from the oven and pour the maple Dijon glaze over the sweet potatoes. Gently toss until evenly coated.
  6. Return the baking sheet to the oven for 8-10 minutes, or until the glaze is bubbling and lightly caramelized around the edges of the potatoes.
  7. Transfer to a serving dish and finish with a sprinkle of flaky sea salt. Serve warm.
