Roast: Roast at 425°F for 30-35 minutes, flipping halfway through, until tender and caramelized around the edges.
Make the Maple Dijon Glaze: Whisk together the melted butter, maple syrup, Dijon mustard, apple cider vinegar, and salt until smooth.
Glaze the Sweet Potatoes: Pour the maple Dijon glaze over the roasted sweet potatoes and gently toss until evenly coated.

Can I use honey instead of maple syrup?
You can, but it will change the flavor of the dish. Pure maple syrup gives these potatoes their signature maple flavor and is my preference here.
Why aren’t the potatoes crisping up?
Ensure you are using a large enough baking sheet that allows the potato pieces space to get crispy, you don’t want to overcrowd the pan. It will result in more steaming than caramelizing if not.
