If you鈥檙e looking to switch up pizza night, this hummus pizza is the easiest way to do it. Creamy hummus and all your favorite mediterranean toppings layered onto a golden pizza crust. A great lunch, dinner, or appetizer!

Hummus Pizza

Pizza is definitely in my top 5 favorite foods. This is such a fun and little bit healthier twist on a favorite that everyone enjoys.

It’s great as a quick lunch or lighter dinner and even better as an appetizer! Cut the squares smaller and you have easy flatbread-like bites.

Ingredients

This pizza clearly leans toward Mediterranean flavors, but everything is customizable. If you don’t like olives or want more tomatoes, do exactly that!

  • pizza crust – I like to use the Pillsbury thin and crispy pizza crust, it works perfect for this, similar to a flatbread
  • hummus – use any flavor you like!
  • feta – crumbled
  • red onion
  • cherry tomatoes
  • green and Kalamata olives
  • marinated artichoke hearts – lightly drained
  • pepperoncini peppers
  • black pepper

How to Make Mediterranean Hummus Pizza

  • Bake the Crust: Bake the pizza crust until golden brown according to the package directions.
  • Prep the Toppings: Dice the red onion, halve the cherry tomatoes, and chop the artichoke hearts and pepperoncini.
  • Assemble the Pizza: Spread the hummus evenly over the cooled crust. Top with red onion, olives, feta, cherry tomatoes, artichokes, and pepperoncini.
  • Slice and serve: Cut into slices and serve!

How to Add Protein to Mediterranean Hummus Pizza

Cooked, chopped chicken would be a great addition to this pizza if you’re looking for more protein or to beef it up for dinner. Just ensure the chicken is fully cooked as it won’t be heated in the oven.

You could drizzle Tzatziki sauce over the top, a greek yogurt based sauce, which will provide a protein kick and a saucier pizza (if that’s what you’re into)!

How to Make Mediterranean Hummus Pizza Ahead of Time

This is best served fresh for the best texture. If you want to prep ahead, chop all your toppings and bake off the crust and store it in an airtight container at room temperature until you’re ready to assemble. Assembling close to serving time keeps everything crisp.

I do eat leftovers out of the fridge, is still good, just not in its best form.

Description

Hummus, salty olives and feta, and a fresh bite with cherry tomatoes and red onion all layered on a pizza crust. A great lunch, dinner, or appetizer!


Ingredients

Scale
  • 8 oz thin pizza crust, I use the refrigerated Pillsbury thin and crispy pizza crust
  • 1/3 cup of hummus, flavor of choice, about half a container
  • 1/4 cup red onion, diced
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup green olives, sliced
  • 1/3 cup feta cheese, crumbled
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup marinated artichoke hearts, chopped
  • 1/4 cup pepperonicinis, chopped


Instructions

  1. Fully bake your pizza crust according to package directions on a parchment lined baking sheet. You want it to be golden brown as we will not be putting it back in the oven.
  2. In the meantime, chop your toppings: olives, red onions, cherry tomatoes, artichoke hearts, and pepperoncini.
  3. Let the pizza crust cool for 15 minutes.聽
  4. Spread 1/3 cup hummus in a thin layer.聽
  5. Top the pizza with all of your desired toppings.
  6. Slice and serve!
