Skirt Steak Marinade

Perfect for summer grilling.

This Skirt Steak Marinade combines fresh herbs, garlic, lemon, and worcestershire sauce to create a tender steak that’s perfect for summer grilling. Slice it over a salad, or tuck it into tacos, this easy grilled skirt steak is one you’ll come back to all season long!

Fresh Herbs

This summer I discovered how much fresh herbs make a difference in a marinade!

Basil especially, it imparts a subtle natural sweetness to both chicken and steak.

Skirt steak is often looked at as a very tough meat, which it easily can be. Marinating long enough, with an acid, and then slicing very thinly against the grain makes for melt in your mouth steak!

Ingredients

This simple marinade is packed with fresh and bright flavors that complement the rich flavor of the skirt steak. Worcestershire adds savory depth, while lemon juice and dijon help tenderize the meat.

  • skirt steak – skirt steak labeled inside or outside will work
  • olive oil
  • worcestershire sauce
  • fresh lemon juice
  • lemon zest
  • dijon mustard
  • honey
  • shallot – grated, it practically melts into the marinade and adds incredible flavor
  • garlic
  • basil
  • parsley
  • kosher salt – I use Diamond Crystal in all my recipes
  • black pepper

How to Make Skirt Steak Marinade

Make the Marinade: Whisk together the olive oil, worcestershire sauce, lemon, dijon, honey, garlic, shallot, herbs, salt, and pepper until combined.

Marinate the Steak: Cover the skirt steak in the marinade and refrigerate for at least 8 hours or overnight for the best flavor.

Grill: Cook the steak over high heat until lightly charred on the outside and medium-rare in the center.

Rest, Slice, and Serve: Let the steak rest before slicing thinly against the grain for the most tender steak.

What to Serve with Marinated Skirt Steak

This skirt steak is fantastic on top of most salads, stuffed into tacos, or even on its own with a few side dishes. Some of my favorites are:

How to Make Skirt Steak Marinade Ahead of Time

This is the perfect marinade to make the day before. Skirt steak is a tougher cut and benefits from a longer marinating time, especially with an acid like lemon or lime juice to help break down the fibers. It also won’t negatively change the texture like it can chicken.

Mix together the marinade the night before, add in the steak, and cook it the next day!

Equipment I Use to Make Skirt Steak Marinade

  • Microplane – so helpful for grating cheese, garlic, and even shallot!
Today’s elevation: Fresh basil and parsley adds bright flavor to the rich steak.

Frequently Asked Questions

Why do you slice skirt steak against the grain?

Cutting against the grain shortens the muscle fibers, making every bite incredibly tender. You also want to thinly slice it.

How long should I marinate skirt steak?

At least 8 hours is ideal, but overnight will give you the best flavor and tenderness.

Ingredients

  • 1½ lbs skirt steak
  • ¼ cup olive oil
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 4 garlic cloves, finely grated
  • 1 tablespoon finely grated shallot
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh basil, finely chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions

  1. In a bowl, whisk together ¼ cup olive oil, 2 tablespoons worcestershire sauce, 2 tablespoons fresh lemon juice, 1 teaspoon lemon zest, 1 teaspoon Dijon mustard, 1 teaspoon honey, 4 finely grated garlic cloves, 1 tablespoon finely grated shallot, ¼ cup finely chopped fresh parsley, ¼ cup finely chopped fresh basil, 1 teaspoon kosher salt, and ½ teaspoon black pepper until well combined.
  2. Add 1½ pounds skirt steak and turn to coat evenly in the marinade. Cover and refrigerate for at least 8 hours or up to overnight.
  3. Preheat your grill to high heat. Remove the steak from the marinade.
  4. Grill the steak for 3-4 minutes per side, depending on thickness, until the internal temperature reaches 135°F for medium-rare. Cook several minutes longer for medium or medium well, I recommend using a meat thermometer. 
  5. Transfer the steak to a cutting board and let rest for 10 minutes before slicing.
  6. Slice the steak thinly against the grain.
