Perfect for using up the trick-or-treat haul.
These Leftover Halloween Candy Cookie Bars are a chewy brown sugar cookie base loaded with chopped chocolate candy, with more pressed on top and a pinch of flaky salt to finish. They come together in one bowl with no mixer, so they’re the easiest way to turn a candy bowl that’s gotten a little out of hand into something worth sharing.

Ingredients
This is a simple melted-butter cookie dough, so everything is whisked by hand. The brown sugar and an extra egg yolk keep the bars soft and chewy, and the salt (both in the dough and on top) keeps all that candy from tasting too sweet.
- unsalted butter – melted and slightly cooled so it doesn’t scramble the eggs
- light brown sugar – brings moisture, chew, and a little caramel flavor
- granulated sugar – helps the edges turn golden
- egg + egg yolk – the extra yolk is what makes these chewy instead of cakey
- kosher salt – I use Diamond Crystal in all my recipes
- vanilla extract
- all purpose flour
- baking soda
- chocolate Halloween candy – any chocolate-based candy works; Reese’s, Snickers, Twix, Kit Kats, and M&M’s are all great
- flaky salt – optional

How to Make Leftover Halloween Candy Cookie Bars
Prep the Pan: Line an 8×8 pan with parchment, leaving an overhang on the sides so you can lift the bars out cleanly.
Mix the Wet Ingredients: Whisk the melted butter and both sugars together, then whisk in the egg, yolk, and vanilla until smooth.
Add the Dry Ingredients: Fold in the flour, baking soda, and salt just until no streaks of flour remain.
Fold in the Candy: Stir in most of the chopped candy, spread the dough into the pan, and press the rest over the top.
Bake and Finish: Bake until the edges are golden and the center is just set. While the bars are still warm, press in any whole candies you want to keep their shape, then finish with flaky salt.
Cool and Slice: Let the bars cool completely in the pan before lifting them out and cutting into squares.

When to Serve Leftover Halloween Candy Cookie Bars
These are made for the week after Halloween, but you don’t have to wait. They’re just as good for a Halloween party, a classroom treat, or a cozy movie night. For more fall baking, pair them with my Pumpkin Spice Glazed Donut Holes.

Best Candy for Leftover Halloween Candy Cookie Bars
Chocolate-based candy is the way to go. Peanut butter cups, Snickers, Twix, Kit Kats, Milky Way, and M&M’s all bake beautifully and melt into gooey pockets. I’d skip gummies, sour candy, and hard candy, since they turn tough or sticky in the oven. If you want a few pieces to look picture-perfect on top, like seasonal Reese’s shapes, press them in right after the bars come out of the oven instead of baking them.

Tips for the Best Leftover Halloween Candy Cookie Bars
The biggest thing is not to overbake. Pull them when the center is just set but still a little soft, since they’ll keep firming as they cool. When you test with a toothpick, poke an area without melted candy, or you’ll get a false read. And let them cool fully before slicing for clean squares.
How to Store Leftover Halloween Candy Cookie Bars
Store the bars in an airtight container at room temperature for up to 4 days. If your kitchen runs warm, the chocolate on top may soften, so a quick 15 minutes in the fridge before serving helps.

How to Freeze Leftover Halloween Candy Cookie Bars
These freeze really well. Wrap individual squares in plastic wrap, place them in a freezer bag, and freeze for up to 3 months. Let them thaw at room temperature for about an hour.

Frequently Asked Questions
What kind of Halloween candy works best in cookie bars?
Chocolate candy works best. Peanut butter cups, candy bars, and M&M’s all bake well, while gummies and hard candy turn tough or sticky.
Can I make these with candy from other holidays?
Absolutely. Easter, Valentine’s Day, or Christmas chocolate all work the same way, so this is a great recipe to keep on hand all year.
How do I know when the cookie bars are done?
The edges should be golden and set, and the center should look just set but still slightly soft. A toothpick in an area without candy should come out with a few moist crumbs.
Can I double this recipe?
Yes. Double everything and bake in a 9×13 pan, starting to check around 30 minutes and adding time as needed.
Why did my candy melt into puddles on top?
Some melting is part of the charm. For pieces that keep their shape, press them in right after the bars come out of the oven instead of before baking.

These leftover Halloween candy cookie bars are soft, chewy, and loaded with chopped chocolate candy, finished with a pinch of flaky salt.
Ingredients
- ½ cup unsalted butter, melted and slightly cooled

- ¼ cup granulated sugar
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 2 teaspoons vanilla extract
- 1½ cups all purpose flour
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- 1½ cups roughly chopped chocolate Halloween candy, divided
- A few whole seasonal candies for topping, optional
- Flaky salt, optional
Instructions
- Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, whisk together ½ cup melted and slightly cooled unsalted butter, ¾ cup packed light brown sugar, and ¼ cup granulated sugar until well combined.
- Add 1 large egg, 1 large egg yolk, and 2 teaspoons vanilla extract. Whisk until smooth and combined.
- Add 1½ cups all purpose flour, ½ teaspoon baking soda, and ½ teaspoon kosher salt. Fold together just until no streaks of flour remain.
- Fold 1 cup of the chopped Halloween candy into the dough, reserving the remaining ½ cup for the top.
- Transfer the dough to the prepared pan and spread it into an even layer. Scatter the remaining ½ cup chopped candy over the top, gently pressing the pieces into the dough.
- Bake for 25-30 minutes, or until the edges are lightly golden and set and the center is just set but still slightly soft. A toothpick inserted into an area without melted candy should come out with a few moist crumbs rather than wet batter.

- Sprinkle with flaky salt, if using. Let the bars cool completely in the pan before lifting them out and slicing.
