Perfect for weeknight dinners.

These Crispy Parmesan Potatoes are everything you want from a potato side dish including crispy golden edges, fluffy centers, plenty of savory parmesan, and a bright finish of fresh lemon.

Ingredients

Yukon Gold potatoes roast up incredibly well, creating delicious creamy centers while still developing crisp edges. Freshly grated parmigiano reggiano creates a delicious crust, while fresh lemon zest and juice brighten them up!

  • Yukon gold potatoes
  • olive oil
  • kosher salt – I use Diamond Crystal in all my recipes
  • black pepper
  • garlic clove – just a small amount, not overpowering
  • parmigiano reggiano – try to find the real stuff, you’ll never go back!
  • lemon zest
  • lemon juice
  • flaky salt – optional, but adds great texture before serving

How to Make Crispy Parmesan Potatoes

Roast the Potatoes: Season the potatoes with olive oil, garlic, salt, and pepper, then roast until crispy and golden.

Add the Parmesan: Flip the potatoes, sprinkle with parmesan, and continue roasting until the cheese becomes golden and crispy.

Finish with Lemon: Toss the hot potatoes with fresh lemon zest and juice before finishing with flaky salt.

What to Serve with Crispy Parmesan Potatoes

These potatoes are perfect year-round. They’re just as fitting for an easy weeknight dinner as they are for Thanksgiving, Christmas, Easter, or Sunday dinners.

How to Make Crispy Parmesan Potatoes Ahead of Time

To enjoy crispy potatoes, I don’t recommend making these ahead of time.

If you have leftovers, reheat in the oven or air fryer until hot and crispy.

Can I use Russet potatoes?

Yes, but Yukon Gold potatoes have a naturally creamier texture!

Why do I add the lemon after roasting?

Adding the lemon juice and zest at the end keeps its flavor bright and prevents it from becoming bitter in the oven.

Can I make these in the air fryer?

Yes. Cook at 400°F until tender and crispy, then add the parmesan during the last few minutes before finishing with the fresh lemon at the end.

Description

Crispy Lemony Parmesan Potatoes are everything you want from a simple potato side dish.


Ingredients

Scale
  • 1½ pounds Yukon Gold potatoes, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 garlic clove, finely grated
  • ½ cup parmigiano reggiano, finely grated
  • 1 teaspoon lemon zest
  • 2 teaspoons fresh lemon juice
  • Flaky salt, for finishing

Instructions

  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
  2. Add 1½ pounds Yukon Gold potatoes, cut into bite-sized pieces, 2 tablespoons olive oil, 1 teaspoon kosher salt, ½ teaspoon black pepper, and 1 finely grated garlic clove directly to the baking sheet. Toss until evenly coated, then spread into a single layer with as many cut sides facing down as possible. Place any large pieces of potatoes on the outside of the baking sheet, they will cook more evenly.
  3. Roast for 30 minutes. Flip the potatoes, then sprinkle ½ cup finely grated parmigiano reggiano evenly over the potatoes. Return to the oven for 10 more minutes, until the potatoes are deeply golden, crisp around the edges, and the cheese has melted and become lightly crispy.
  4. Transfer the potatoes to a serving bowl. Add 1 teaspoon lemon zest and 2 teaspoons fresh lemon juice, then gently toss to coat.
  5. Finish with flaky salt and serve immediately.
